Ingredients:
1 can coconut milk
1 mango
Directions:
This delicious puree is a good choice for breakfast or anytime you feel like having a tropical type of meal. It is easy to prepare. All you need is to add 1 can of coconut milk and a ripe mango into the blender. You can even use frozen mango chunks instead. Add a bit of lime juice to give the puree a tasty tang.
Pumpkin Cauliflower Curry
Ingredients:
8 oz pumpkin
8 oz cauliflower
1 cup water
Dash of pepper
1 tbsp olive oil
1 tbsp curry powder
Greek yogurt (optional)
Directions:
This recipe requires some effort but the delicious spiced flavor is worth it. Chop the pumpkin and cauliflower into smaller pieces. Heat the oil in a wok and add the curry powder. Stir the mixture until it smells great. Add the pumpkin in and continue stirring for 2 minutes. Add water and let it boil for 5 minutes. Stir the mixture occasionally. Add in the cauliflower and reduce the heat to let it simmer for 2 minutes. Add in the yogurt and simmer it for 2 minutes longer. Last, add curry into the blender and add ground pepper to it. You can blend it until the curry is smooth.
